So JJ2+ is a fan made patch for Jazz Jackrabbit 2. It's very good, it's even mentioned on the store page however... This appears to be the LK Avalon release of Jazz Jackrabbit 2 which isn't compatible with the patch. I actually like the LK Avalon release as it includes Holiday Hare 98 which is a updated version of Christmas Chronicles and I consider the LK Avalon release as the most complete version. But is isn't compatible with the fan patch.

I see two options here, either the community will patch JJ2+ to work with the LK Avalon release (which I would prefer) or GOG could add another version of Jazz 2 that is compatible. I don't believe the LK Avalon release should be removed tho, it is great for archival purposes and is what I consider the most complete single release as it includes all levels and characters, etc.

LK Avalon version - unfortunately - isn't compatible with JJ2+ and if you will install JJ2+ version from GOG it doesn't include Polish language from what I see.

So how does this work exactly? I'm new to using GOG Galaxy. I have JJ2:TSF and JJ2:CC both installed through Galaxy, and I see in Extras for TSF that there's JJ2 with JJ2+, but after that downloads it doesn't change anything. Am I missing something?
Don't get fooled by this normal release vs. LK Avalon release or compatibility with this or that. I've seen it many times in the forums GOG.com distribute the game with separate installers. This means if you install the JJ2+ version over the LK Avalon there won't be any problems neither conflicts. It is like manually copying map or content files in the JJ2+'s folder except you do the exact opposite and put JJ2+'s system files in the standard version's folder.

...nothing. It's already there on the list of channels, you just need to pick it.
Just go to the downloads section and download the installer for JJ2+, it's listed under the goodies. What I did was install Jazz 2 with Galaxy, then used the downloaded installer for JJ2+ from GOG, and now JJ2+ launches from Galaxy. Cool, right?
